Dallatana company offers the exclusive opportunity to know all the secrets of the tradition of the superb Culatello di Zibello PDO by reserving the visit of its processing rooms and the seasoning cellars.
Travelers, groups and schools, connoisseurs and lovers of the Charcuterie products of the Lowlands of Parma (Bassa Parmense) will be guided – by the internal staff of the company – at the discovery of the authentic Culatello di Zibello PDO: through a visit of about 45 minutes, equipped with shirts, caps and cuffs , you will discover the authentic Culatello di Zibello and the meaning of craftsmanship of the King of Salami, a product of Protected Designation of Origin.

The working environments will be visited to understand in detail the most important stages of raw material transformation and the ancient techniques of salting, encasing and binding. You will then go underground to visit the natural seasoning cellars, where hundreds of Culatelli of Zibello and ancient cold cuts of Parmense rest, lulled by time and humidity. Armed with wooden hammer and horse bone needle, the guide will then show the punching techniques to recognize the quality and the distinctive fragrances of long maturing.

At the end of the tour, you will be able to purchase all the products of Dallatana production in the company store or continue visiting the 1600 refining cellars at Osteria Dallatana, adjacent to the birthplace of Maestro G.Verdi.

Guided tours are organized from Monday to Friday from 8.30 to 12.00 (last entry at 11.15 am) and from 14.30 to 17.30 (last entry at 4.45 pm), Saturday and Sunday only in the morning. Booking is compulsory.

Costs: up to 15 people, single entrance € 60,00. Over 15 people, single entrance € 3.50.
