It is obtained from a selection of the best lean cuts which are expertly mixed with the right quantity of fat, and flavoured with a few simple ingredients. The resulting mixture is cased in natural intestines and then aged in the same cellars as the Culatello. It has a full and intense flavour, without losing its unmistakable sweetness. The minimum ageing period is 50 days, average weight 700g.
