Fiocco di Roncole Verdi

It is the second cut by importance: it is obtained from the front part of hams – exclusively from heavy pigs, born and raised in Emilia Romagna and Lombardia. Because its sweetness and delicate flavor, Fiocco is quite similar to Culatello and they also share many processing phases. Fiocco seasons at least 10 months, its average weight is 2.5 KG.
